Sautéed Tilapia with Honey-Scallion Dressing

Ingredients
For the dressing
2 1/2 tablespoons fresh lemon juice
2 tablespoons green onions, chopped
1 tablespoon honey
1 tablespoon soy sauce
1 teaspoon fresh ginger, minced
1/4 teaspoon sesame oil

For assembly
1 tablespoon olive oil
4 (6-ounce) tilapia fillets
1/2 teaspoon salt
1/8 teaspoon black pepper 

Instructions
1. To prepare dressing, combine dressing 6 ingredients in a bowl, stirring well with a whisk.  (You could also blend the dressing ingredients with an immersion blender.)

2. To assemble dish:  Heat oil in a large nonstick skillet over medium-high heat. Sprinkle fish evenly with salt and pepper. Add fish to pan; cook 3 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness.  Serve fish with dressing.

This recipe is from Cooking Light and I thought this was great.  The delicate flavor of the tilapia went nicely with the assertive flavors of the Asian-inspired dressing.  Lance, however, didn’t care for the flavor and we’re not entirely sure why.  The result is that I doubt I’ll be making this again, but I sure did enjoy the leftovers.
