Tomato Relish

Ingredients
1 pound tomatoes, cut into small pieces
2/3 cup red onion, finely chopped
1/4 cup fresh parsley, finely chopped
1/4 cup olive oil
3 tablespoons fresh lemon juice 
Salt and freshly ground black pepper

Instructions
1. Combine all ingredients.  Season with salt and pepper.  Cover and chill in refrigerator.
