Ginger Scallion Noodles

Ingredients
2 tablespoons olive oil
1 bunch green onions, sliced
2 tablespoons cilantro, chopped
2 tablespoons ginger, minced
1 tablespoon garlic, minced
1 tablespoon shallots, minced
2 teaspoons fish sauce
1 tablespoon sesame oil
1 tablespoon honey or sugar
1 teaspoon rice vinegar
2 teaspoons soy sauce
1 pinch red pepper flakes
Kosher salt, to taste
10 ounces ramen noodles, seasoning packets discarded and cooked according to package instructions, and drained

Instructions
1. Heat oil in saucepan over high heat.  Add green onions, cilantro, ginger, garlic, and shallots.  Stir quickly to coat in hot oil then remove pan from heat.  Add fish sauce, sesame oil, honey or sugar, red pepper flakes, and salt, to taste.  Let sauce sit for 15 minutes. 

2. Toss sauce with pasta.
